A spoonful of delicate stone-ground Gouda grits s topped with sautéed shrimp and finished with a bacon crema. 

Tuna Poke*
Asian Inspired tuna in a cucumber cup.

Chile seared tuna with wasabi aioli and jicama slaw. Garnished with sliced radish.

Louisiana Style Ceviche served in an edible, baked wonton cup 

Lobster Bisque Shooter
Creamy Lobster Bisque served in a shot glass and topped with a butter poached lobster chunk and green onions.  Add Beef Tenderloin Skewer.

Gulf Coast Seafood Gumbo with a kick. Topped with southern fried Okra. 

Crawfish Monica
GBC’s version of a Louisiana classic. A spicy, cheesy crawfish mac and cheese. It’s awesome.

Louisiana Style Ceviche served in a house-made wonton cone.

Center-cut pork loin wrapped in bacon, slow roasted and seared to a perfect finish. Topped with our peach sherry reduction.

Fish or Shrimp
With Tropical Mango Slaw: Shredded red and white cabbage mixed with julienne carrots and sliced mango tossed in a light vinegar and citrus marinade.

Steak or Chicken
With Chimichurri Slaw: mixed cabbage marinated in a blend of herbs and lime. This slaw was designed to pair perfectly with steak and chicken.

Sides:  Yellow Rice and Black Beans

Toppings:  Pico de Gallo, Jalapenos, Fresh Cilantro, Sour Cream, Lime Wedges, Shredded Cheese, Queso Fresco.

Salsas:
