Seared Tuna
Chile seared tuna with wasabi aioli and jicama slaw. Garnished with sliced radish.

Louisiana Style Ceviche served in an edible, baked wonton cup 

Lobster Bisque Shooter
Creamy Lobster Bisque served in a shot glass and topped with a butter poached lobster chunk and green onions.  Add Beef Tenderloin Skewer. 

Gumbo Shooter
Gulf Coast Seafood Gumbo with a kick. Topped with southern fried Okra. 

Crawfish Monica
GBC’s version of a Louisiana classic. A spicy, cheesy crawfish mac and cheese. It’s awesome. 

Grit Bowl
Creamy, stone ground, smoked Gouda grits, served with sautéed shrimp garnished with diced tomatoes and green onion.

Roasted beef tenderloin carved to order; served with a creamy Sriracha infused horseradish sauce along with a sweet and spicy onion pepper marmalade. 

Bacon Wrapped Pork Loin
Center-cut pork loin wrapped in bacon, slow roasted and seared to a perfect finish. Topped with our peach sherry reduction. 

Honey Balsamic Chicken
Juicy grilled chicken breast finished with a tangy blend of honey and balsamic vinegar.

Eggplant Rollatini

With Chimichurri Slaw: mixed cabbage marinated in a blend of herbs and lime. This slaw was designed to pair perfectly with steak and chicken.
